A Classic New England Comfort Dish Made Simple

Growing up boston baked beans were a staple snack in my house.  This summer as I was trying to figure out how to get my kids to eat more beans(All the healthiest, longest lived populations eat lots of beans and they have many health benefits…) I was reminded of this childhood favorite and set out to reproduce the flavor profile while greatly simplifying the process and bumping up the health and taste factor. The reviews have been soaring so I’m happy to share the recipe with you and hope you enjoy all the comfort,  warmth, and deliciousness of this new england classic!

Step 1

Soak 1lb(2.5cups)beans over night in 1.5 quarts water or pour boiling water over beans 1-2 hours before cooking.  Use any bean but my favorite is Yellow eye for it’s ability to hold shape and it’s delightful, slighty chestnuty sweet flavor.

Step 2

Cook Beans until Tender Typically about 30-60 minutes Drain any excess water.

Step 3

add two 2 quarts cooked beans(yield from one pound)

-Molasses 1/2 cup

-Maple syrup 1/3 cup

-Ketchup 1/3 cup

-Mustard 1.5 tbs

-Onion 1.5tbs powder or 1/3 cup diced

-Cooked Bacon, ham hock or pork shoulder(optional)

Heat, serve, and enjoy!
