Ancient Grain Pancakes are probably one of the funnest and simplest ways to refresh and upgrade your pancake game. Dot them with chocolate chips after you start them in the pan and you’re quickly on your way to a household classic. Gabriel, inspired by the unctuous dotting of  chocolate said “These are Chocolate Cheetah Pancakes!” Brilliant!! I love that guy.

This recipe has both baking powder and baking soda so the batter can be used immediately but it also has yeast so the batter can be used for up to a week  if kept in the fridge. Make enough batter for the week and have delicious and easy morning treats ready to go in 5 minutes!

Adjust the consistency of the batter as needed so they spread easily, but not too thin. Drop chocolate chips(cheetah effect) or whatever fruit in bite size pieces you have around or just go cammando! Cookie cutters and a squeeze bottle makes for extra fun(and work) if you have the time and are feeling creative. Also use multi grain flour mixes for additional variation/experimentation. It’s hard to wrong with pancakes so have fun!

 

Ingredients

 

Dry

  • 2 cups emmer flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Instant Yeast

Wet

  • 1 cup yogurt/buttermilk/
  • 1 cup  water or milk
  • 2 eggs
  • 3 tbsp Maple Syrup

 

Directions

  • Whisk dry together.
  • Whisk wet together
  • Stir together with spatula

  • Use batter immediately or store in fridge for use anytime in the next week. Stir gently before using after refrigerating and don’t worry that the batter will turn slightly grey. This will not effect taste or look after cooking.
