Ingredients
- 1 pound fresh mixed chiles, 4 oz dried chiles, or a mix (1/2 lb fresh and 2 oz dry).
- 2 medium red onions
- 2 medium sized carrots
- 1 lb kidney or Jacob’s cattle beans
- 4 cups chopped tomatoes
- 4 cloves garlic
- 2 tsp salt
- 1 tsp black pepper
- 1/2 tsp cumin
- 1 tbsp garlic powder
- 1 tsp dried oregano
- 1 lb ground beef
- 2 tsp salt
- 4 oz tomato paste
- Optional smoky and/or hot chiles and chili powders
Instructions
- Soak beans overnight in cold water or pour boiling water over beans. Soak for 1-2 hours.
- Simmer until the beans are tender, drain and set aside.
- De-stem your dried chilis and rough chop, removing pith and seeds for reduced heat.
- Add tomatoes and chiles to your pot and bring to a simmer.
- Slice onions and carrots and add them to the pot.
- De-seed fresh chilis (unless you want the extra heat), slice, and add to the pot.
- Add tomato paste, crushed garlic, salt, pepper, cumin, garlic powder and dried oregano.
- Simmer gently for 1-3 hours, depending how chunky you like it. The longer you cook it, the smoother it will become.
- Add cooked beans.
- At the end, once the heat is turned off, add the ground beef, so as not to overcook.
