Ingredients
- Perfect Pizza Dough made with einkorn (or other) wheat flour
- 3 large red or yukon potatoes
- 2 cup whole milk ricotta
- 1 head broccoli
- 3 strips of thick-cut bacon
- 1 cup low-moisture mozzarella, cheddar, or any other favorite cheese.
Instructions
- Prepare the Perfect Pizza Dough, using einkorn or another wheat flour.
- Bake potatoes and prep the raw broccoli.
- Cook bacon 80% of the way and chop roughly.
- Grate cheese and grease pan.
- Roll out the pizza dough and press into your pan, making the edges a little thicker than the bottom.
- Cover the bottom of the pie generously with ricotta (at least ¼ inch).
- Slice the potatoes 1/4 to ⅓ inch thick and layer on top of the ricotta.
- Cover with grated mozzarella, cheddar, or other favorite cheese.
- Top with bacon, broccoli and touch more cheese.
- Bake at 400 degrees for about 40 minutes.
