Honey-Kissed Brioche Buns

The arrival of summer screams for the most classic of all backyard grillable foods – the burger! These buns are quick and easy (25 minutes) to make and keep well in the freezer. Golden brown on the outside, sweet and soft on the inside, these whole grain buns are the perfect base for a classic beef or bean burger, portabello mushroom or grilled chicken breast.  top with LTO and your favorite condiments.  The dough is quite versatile and can also be shaped into a loaf, hot dog buns, or a filled with custard or cream for a decadent Maritozzi pastry

Ingredients

  • 22 oz Bread flour (we use redeemer)
  • 2 tsp salt
  • 2 tsp instant yeast
  • 8 oz water or milk
  • 6 oz butter
  • 2 large eggs
  • 1/8 cup honey

Instructions

  1. Measure out and mix bread flour, salt and yeast.
  2. Melt butter in half of the water or milk.
  3. Add the rest of the water or milk, and the honey. Stir together, add eggs and mix .
  4. Thoroughly combine wet and dry mix. knead for 1-2 minutes until dough is soft but not wet.
  5. Take dough temperature: 85° is ideal. 
  6. Set timer for 45 minutes. When it goes off, fold the dough.
  7. repeat step 6.
  8. Once dough has doubled in volume, degass and portion into 10-12, 3-4-oz pieces. round and cover with plastic. let rest for 15-30 minutes.
  9. Place on a baking sheet lined with a silicone mat, cover in plastic and allow to double in size.
  10. Pre-heat oven to 400 degrees for 30 minutes.
  11. Whisk one egg and use to egg wash all the buns
  12. Load buns into oven and toss 3 oz of water in the bottom of the oven for steam.
  13. Bake until golden brown and internal temperature reaches 200° (about 20 minutes).
