Tzatziki
With the refreshing taste of yogurt, and the subtle tang of citrus and herbs, Tzatziki is a simple but stunning compliment to hummus and pita bread, as a topping for grilled meats and vegetables, and a dip for raw veggies.
Ingredients

- 1 Cup Greek Yogurt (drained in cheese-cloth)
- Juice of 1/3 lemon
- 1/2 Cup cucumber, peeled, diced and seeded
- 1 TBSP chopped fresh dill, mint or other fresh herb (you can use dried if fresh is unavailable)
- 1 clove fresh garlic, pressed or microplaned (optional, but highly recomended!)
- 1/2 TSP salt
- Pepper to taste

Just mix and enjoy!
Notes
Sometimes I omit the cucumbers for a less watery sauce; instead, I dress sliced cucumbers, onions, and radishes with seasoned vinegar and add them as a garnish on top of the tzatziki.
