Buckwheat Crepe with Ham, Cheese and a Runny Egg
Another brilliant creation from France! The buckwheat crepe or “Galette” became common fare in the west of France (Brittany and surrounding areas) in the 14th century when depleted soils struggled to grow wheat. Crepes are typically filled with sweet ingredients, but buckwheat’s grassy flavor lends itself particularly well to savory fillings. For something that looks and tastes so fancy, this is actually incredibly quick and simple to prepare. You stir together your batter –buckwheat flour, egg, water and salt – and pour into a preheated buttered pan. This is a real treat and a fantastic way to start (or end) your day. I like a brie or camembert here but really any cheese would work. You can also substitute the ham with pre cooked bacon or smoked salmon.
Ingredients
Crepes-
- 1 cup Buckwheat Flour
- 1 Egg
- ⅓ tsp salt
- ½ cup milk or water
- Butter, melted ½ TBSP
Filling-
- 1 slice of ham (per crepe)
- 1 egg (per crepe)
- 1 large pinch of salt
- 1–2 oz cheese
- finely chopped herbs
Instructions
- Stir together your batter –buckwheat flour, egg, water and salt.
- Pour batter into a preheated, buttered pan.
- Crack your egg in the center and layer your ham and cheese around the yolk.
- After 3 minutes, fold in the sides and slide the crepe under your preheated broiled to finish for 2 minutes.
- Garnish with herbs.
